Clos de Lôm Monastrell Rosé Wine: this pale-colored rosé is made with Monastrell grapes from vineyards that are more than 45 years old in glass and on dry land with clayey-calcareous soils. It is harvested in the last week of September when The grapes reach their maximum ripeness.
The harvest is received early in the morning and processed quickly with the latest technology. The clusters are destemmed to remove the stem or herbaceous part, the berries are crushed, macerated in a continuous homogenizer and the flower must is separated with a Decanter system, no presses are used.
It is then taken to the tanks where it ferments, with our own selection of yeasts, for more than three weeks, to extract the maximum aromatic power and richness of nuances in the mouth.
Once the fermentation is completed, the wine rests with the lees in suspension for more than 4 months to achieve greater complexity and volume in the mouth, until obtaining this precious Valencian rosé wine in the typical style of French Provence.
