Clos de Lôm Tempranillo Red Wine: This wine is made with Tempranillo grapes from vines over 30 years old in goblet-trained vines on dry land with calcareous-sandy soils in a continental climate with Mediterranean influences.

The grapes are received early in the morning and processed quickly with the latest technology. The grapes are destemmed to remove the stalks, crushed to obtain the must, and then vatted in small stainless steel tanks. It is then cold macerated for a minimum of 5-6 days using a compressed gas pumping-over system to avoid losing aromas in the process. Fermentation is carried out at a controlled temperature of 26º C. to devat through a Decanter to macroxigenate and clean the excess lees. The end of fermentation is done at a temperature of 22ºC and malolactic fermentation is carried out in the tanks with a selection of bacteria to convert the malic acids into lactic acids, which round the wine and make it more pleasant.
