The process of making Fair Belize Rum begins with the selection of the best varieties of sugar cane from local fields. These canes are harvested by hand and carefully transported to the distillery for processing. Once there, the canes are pressed to extract the sweet and aromatic sugar juice.

The sugar cane juice undergoes a fermentation process in which carefully selected yeasts are added. During this process, the sugars are converted into alcohol, creating a liquid known as “must”. The fermented must is distilled twice in copper stills, which allows a pure and clean alcohol to be obtained.

After distillation, the rum is aged in carefully selected oak barrels. These barrels give the rum its characteristic flavor, as well as its smooth and complex notes. The aging time can vary, but Ron Fair Belize opts for a minimum aging of five years to ensure the highest quality.

During the aging process, the rum acquires a number of unique characteristics. Belize's warm, humid climate accelerates the interaction between the rum and the oak wood, resulting in a greater extraction of flavors and aromas from the wood. The rum acquires notes of vanilla, caramel, spice and tropical fruits, creating a distinctive and exquisite flavor profile.
