The soils of these vineyards mostly contain granitic soils with some farms where the ground can be of schongs. 

Elaboration 

Once the clusters arrive in the winery, the grapes is subjected to temperature control using a refrigeration chamber with a controlled temperature of 5º. Subsequently, the clusters are taken to a vibratory selection table and the chosen ones pass through the process of depiring and maceration of the entire grape before passing through the pneumatic pressing, which lasts around 2 hours. 

After passing through these processes, the musts are separated, a static deranged and a controlled temperature fermentation are carried out.
