The harvest which takes place in the "Marco de Jerez", is of utmost importance for the elaboration of Vino de Jerez Apostles Palo Cortado, grapes reach the winery, they are carefully pressed, without crushing the stems, seeds and skin. The juice aged it is through the system of criaderas y soleras in American oak butts. After fermentation and fortification, each wine ages in soleras independent where they mature before being blended. Then they become the hearth of Apostles, where the wine will remain until more than 30 years.
