After the harvest, the grapes go through a selection table to enter the tank perfectly clean cluster fermentation, leaves and green elements possible.

The fermentation tanks are made of cement with temperature control which are carried out bleedings for the perfect quality and concentration of fruit flavors and nuances mouth. Each year, the winemaking process is tailored to the particular characteristics of the vintage in order to extract the full potential of the vineyards and the best expression of the Merlot.
