L' Inconscient is a fresh and lively wine, but also serious, complex and deep. The Carignan grape, which is a 30% blend of wine, looking shy in glass, the first impression is of a compact nose, something closed but after a while just revealing their virtues (we recommend opening the bottle at least half an hour before drinking ). Once opened, I begin to detach elegance aromas from fruit picked in the forest ( wild fruits, spicy notes ) to velvety aromas ( rose fragrance ). It seems as if the wine suddenly awakened after a long sleep. Palate reacts similarly. Starts with some drying sensations, but with time and shows even touch sweet and strawberry flavors. The fruit is quality, well crafted ( short maceration ), and very easy to drink , clean, frank, creamy but light touch drink, mineral, earthy notes, a smooth structure and refreshing acidity well integrated. Enjoy it to consciousness.
Pairings: Salads with meat / rice / rabbit / Mediterranean cuisine / warm salad / appetizer
Aging: Aged for 12 months in wooden vats French oak 7000 l.
