Autoctone grapes of the area and vineyards owned between 25 and 35 years, harvested in the first fortnight of October when the grape reaches its maximum level of maturity and sugar. The vineyards are irrigated by the scarce rainfall of the area. The climate is soft winters without frost and with short periods of low temperatures. Spring is short and long summer, since good temperatures endure until October.

For the elaboration of red wine the Caire Monastrell, the grapes, to press and move to deposits of 25,000 liters of stainless steel where the fermentation at approximately 24 degrees is offset.
