Long fermentation and the pot still, as it is the equation that has contributed to the century-old reputation of Jamaica rum and powerful, with a strong character. Pineapple, mango and citrus give their greed, while registration of chopped vegetables and spices make a rare and elegant rum.
Tropical aging eleven years in barrels of Bourbon, Jamaica aging Continental, ageing: two years in barrels of Pierre Ferrand Castle Bonbonnet, France.
