The harvest of peppers from Lodosa, as the rest of the working plant Cathedral Navarra, is always manual. Thus, holding a first product selection in the crop itself. Once on site, the fruits are cooked over an open flame and peel without coming into contact with water. Thus, the taste remains intact piquillo fresh from the fire, who then manually packaged and sterilized. Convietiendose into a real product for Gourmet.
 
Each of the steps in this process is performed in the Cathedral of Navarre, under the strictest quality controls and external, as guaranteed by the Company subject to international standards IFS (International Food Standard) and BRC (British Retail Consortium).
 
The deep red color, the small size and sweetness are the main features of the pepper hosted Designation of Origin 'Lodosa Piquillo'. To ensure this quality, the consumer should look at the logo pack the PDO Lodosa Piquillo and a numbered Regulatory Council. These two elements distinguish the fruit invoked the stringent rules and controls the name of the pepper that is not. Furthermore, only the red peppers with Designation may include in its name the word 'Muddy'.
 
PALATE AND RICH FOR HEALTH, A true gourmet product, with a high water content, peppers from Lodosa barely contain lipids (fats), making their caloric intake is very low. They are rich in fiber and contain minerals such as phosphorus, potassium, magnesium and calcium.

TASTING NOTE

VIEW
En plato presenta un color rojo brillante, con una piel tersa y fina que refleja su frescura, con una ligera curvatura típica de la variedad.
NOSE
En nariz desprende aroma natural e intensamente dulce, con un toque ligeramente ahumado, característica propia de su proceso de asado artesanal. También se pueden distinguir notas herbáceas y frescas, propias del pimiento maduro.
MOUTH
En boca es suave y jugoso, de sabor dulce y equilibrado que combina la dulzura natural del pimiento con una leve nota ahumada que recuerda a su asado. La textura es carnosa, con piel fina y agradable al paladar.
