The fruit from these vineyards has a skin-pole ratio (very thick pulp and low water content in the pulp) very favorable for obtaining high quality wines. For the elaboration of this wine, the best fruit was selected at a maturity point that will offer us a good phenolic concentration without losing a lively acidity, which, in turn, will provide great freshness to the final wine.
The harvest of these payments begins around September 15 and after a selection in Viñedo himself reaches the cellar in boxes of 15 kg. There, it is again manually classified at the selection table.
A total depiring is made and we start a three -week maceration where, through comebacks, we extract all the aromatic and flavor potential as possible. Finally, it is deposited in French oak barrels (Allier and Nevers) and American (Missouri and Virginia), from 1 to 2 years of use, where it will perform malactic fermentation and aging for 9 months.
