To elaborate this Manzanilla Gabriela of Bodegas Miguel Sánchez Ayalase the Palomino Fino grapes are selected and taken to the winery to begin the elaboration process. After fermentation with indigenous yeasts from the vineyard itself and the subsequent heading. This fortified wine is aged for five years in American oak barrels using the traditional system of criaderas and soleras.
Palomino Fino is an autochthonous Spanish variety and is mainly used for the production of fortified wines, which represents 95% of the vineyards in Spain in the Marco de Jerez. The clusters of this variety with which this fortified wine is made grow in a vineyard located in Las Cañas, an estate belonging to the Bilbaina which is one of the best vineyards in Jerez where its white soils of albariza stand out and give the wine that distinctive touch of minerality and salinity.
