They were immediately pressed and the juice, which was left a little shady and is fermented slowly over the winter at low temperatures to help maintain their rich and fruity characters. A portion underwent spontaneous fermentation, antural, without the addition of yeast, in old barrels, great to give the final mix additional complexity and richness.
With careful cellaring over the next 5 or 6 years, this wine should develop a new set of characters and complexity.

Nose: Aromas of lemon, lime, apple, plum and nectarine.
Taste: At first it seems deceptively light, but quickly expands to fill the mouth with impressive fruit concentration and depth. A tingle runs in the mouth by the minerality that comes from the soil and through the wine flows and draws its lingering aftertaste.
