Subsequently, the skins are separated from the must and wine spirit is added at 77% v/v, achieving that the wine reaches 19% alcohol and between 90 and 120 g/l of reducing sugars typical of the grape. Aging is carried out in larger capacity containers, allowing the flavors to develop and integrate harmoniously.
