Carballal de Sande: Diferente por Naturaleza
La pasión por el vino y la gastronomía llevan a Manuel Pérez a la zona de Arbo en abril de 2005, donde se celebra la Fiesta de la Lamprea.
Desde el restaurante donde come divisa una finca con viejo plantío y construcciones de piedra. Pregunta por esa propiedad y le dicen que se vende. Después de varias negociaciones toma posesión de la misma en junio de 2005. Durante dos años se llevan a cabo trabajos de remodelación y adaptación de instalaciones, para comenzar la actividad en septiembre de 2007. La bodega Carballal de Sande toma su nombre del de la finca, Carballal, y del lugar donde ésta se encuentra, Sande.
Se respeta y cuida el medio ambiente: el abonado de las tierras se hace siempre de forma natural, con lo que produce la yeguada que se encuentra en la finca. Los tratamientos aplicados son los mínimos necesarios para lograr una óptima calidad de la uva.
Hoy se elaboran vinos de forma tradicional, aplicando una moderna tecnología en bodega. Dos marcas: CdeS –iniciales de Carballal de Sande-, marca emblema de los vinos Albariño y Condado, y BestaRoxa- apodo familiar que da nombre a otros vinos. Ambas marcas certificadas por la D.O. Rías Baixas.”
