Fermentation takes place at low temperatures, 14 - 16ºc, which helps to maintain and intensify the varietal character. After fermentation the wines are a period of time contact with the fine Lees, to increase the structural characteristics of the wine providing fatty acids and sensations in the mouth wider and glicericas.
