It is made with agar agar. The consistency is not jam, remains more gelled.

Ideal for dressing salads, pastas, etc. As a sauce, it complements well with meats, like grilled chicken.

For canapés and toasts, e.g. of green olive pate and jelly red Vermouth, with cheese brie /cabra and Red Vermouth jelly.
