The viticultural cycle begins with a meticulous pruning, in which the plots that will provide the grapes for the Viña Arnáiz Ribera del Duero Crianza red wine are carefully selected. Throughout the year, the vines receive careful treatment and care to ensure that they grow healthy and strong, allowing the grapes to reach their optimum ripeness in each plot. It is at this point that the date of the harvest is decided, which is carried out manually to guarantee a rigorous selection of the grapes.
Once the bunches arrive at the winery, they are destemmed and maceration in tanks begins. This maceration process continues until the desired balance in the wine's composition is reached, allowing the flavors and aromas to develop fully. It is worth mentioning that devatting is carried out by gravity, without mechanical intervention, in order to preserve the integrity of the wine.
The next important step in the elaboration of this wine is the malolactic fermentation, a process that softens the acidity and brings greater aromatic and gustatory complexity to the wine. After this step, aging begins, a crucial stage that takes place in new French and American oak barrels for 14 months. During this time, three rackings are carried out to oxygenate the wine, favoring its evolution and adding nuances to its organoleptic profile.
Once the barrel aging is completed, the wine is bottled and goes through a final phase of maturation in the bottle for a year to complete its aging process. During this time, the flavors are refined and the aromas are integrated, offering the consumer a unique and pleasurable winemaking experience.
