The WIN.0 red wine is a special limited edition, a non-alcoholic wine (0% vol. alcohol), part of the Matarromera group, made with Tempranillo grapes.
Winemaking process
The process of this wine is simplified in three phases: de-aromatization, dealcoholization and reconstruction.
During de-aromatization, the volatile aromatic compounds are separated from the wine and kept at a controlled temperature. De-alcoholization is the second stage of the process, when we obtain the de-aromatized wine, it is de-alcoholized, and as a consequence of this, we have two separate compounds: ethanol (approximately 60º) and de-alcoholized wine. And finally the reconstruction, after having dealcoholized the extract, the aromatic part is incorporated into the dealcoholized wine, preserving all the organoleptic properties of the original wine.
